Jump to Recipe Indian borage leaf, also commonly called carom leaf or ‘ajwain ke patte’ is no novelty to Indians. Like many, I grew up watching my Mum tend this herb in her garden and when the Monsoons hit Indian shores, she’d make these pakoras as our evening snack. I decided to have a go at growing this herb on my UK kitchen windowsill this year to relive those memories and also to introduce its nutritious leaves to my daughter. According to Ayurveda,carom or ajwain is a powerful cleanser. It stimulates the appetite and enhances digestion. And as luck would have it, it thrived on the windowsill. So much so that I had to prune it. The pruning job soon led me to make these delicious pakoras. With leaves so lush and beautifully serrated – how could I let them go to waste? So that’s how carom leaf pakoras became an inevitable and welcoming tea-time snack for my mixed heritage family. Tender carom leaves are dunked in light gram flour batter (also known as ‘besan’) and deep-fried, imparting their digestive properties to a plateful of sinful pakoras. Carom leaf has a mildy bitter, aromatic herbal flavour redolent of thyme with subtle tones of oregano and fennel. The very act of gently wrapping it in a light batter is reminiscent of my Mum’s gentle hug as my five-year-old self clung to her whilst she cooked these. Recipe: Ovyachya Panachi Bhaji (Ajwain ke patte ke pakode)

Recipe: Ovyachya Panachi Bhaji (Ajwain ke patte kepakode) Ajwain (carom) seeds are very commonly used in Indian cooking and they are used in traditional medicine to relieve indigestion. The leaves of this plant too have a very nice and intense aroma and many people use the leaves to help relieve a sore throat. My mother had the plant growing in her garden and I couldn’t stop myself from plucking these fresh beauties today and make some traditional bhajis (fritters). The aroma was so amazing, it lingered in the entire kitchen when I brought them in fresh. Ingredients: Carom leaves (Ajwain ke patte/ovyachi pane) from 3 big stalks, Besan (chickpea flour) 3/4 th cup, ½ tsp sesame seeds, A small pinch on turmeric, Very little red chilly powder (do not add too much, else it masks the delicate spiciness of the ajwain leaves), Water, Salt to taste, Oil to fry. Carom leaves (ajwain ke patte) • Add the chickpea flour, salt, turmeric, chilly powder and sesame seeds in a mixing bowl. • Add water while whisking constantly to make a thick batter. (It should be of idli like consistency; if it’s too thin, it won’t coat the leaves properly.) • Heat oil in a kadhai and add a drop of batter to it to check if the oil is hot enough. • Put the carom leaves in the besan batter and coat the leaves evenly. • Put the leaves in oil and deep fry till golden brown and drain on tissue paper to remove excess oil. • Serve hot with ketchup, chutney or just like that.

It tastes slightly spicy, sweet, and tangy flavors. In this recipe I saw 2 methods of making Gujarati patra, one is regular and another is pan-fried crispy patra. It is easy to make and you can also make patra in advance and use them for 1 or 2 days if stored in an airtight container in the refrigerator. You can serve it as breakfast or evening snacks.
