Jeera Aloo Recipe (Cumin Potatoes)

9K Shares Jeera aloo, a flavourful & delicious North Indian side dish made with potatoes, spices and herbs. ‘Jeera’ is the Hindi name for the spice ‘CUMIN’& aloo is the word for potatoes. So jeera aloo is potatoes sautéed with cumin. This is a quick, simple and delicious dish that can be made even by novice cooks. It is a side dish that can be eaten with Rice Dal, roti, Poori. Jeera Aloo I often make Jeera aloo for the office & school lunch box as there is no preparation work involved for this recipe. Like most other kids, mine too love potatoes. They enjoy this just with any thing, rice or roti as a side. Sometimes I also use it as a filling in the Kathi rolls and sandwiches along with some julienned veggies. This is a dry dish, so it is good to serve along with a gravy, dal or atleast a raita. I resort to this jeera aloo when I have surprise guests home for a meal. Some basmati rice, dal, this jeera aloo, papads & My recipe will give you jeera aloo that is super flavorful and not at all bland. It has a punch of flavors from whole cumin seeds, ground cumin, ginger, red chilli powder, coriander powder and kasuri methi. I make two of these Jeera rice in two ways or rather three ways (If I count the rice cooker method too.) Depending on how I am serving it. Jeera Rice in Pressure Cooker Generally for day to day or everyday cooking and when I am in a hurry, I make it in a pressure cooker or the pulav method. In a pressure cooker, I add in the ghee, jeera, rice, water and salt. Take 1-2 whistles and I am done. This is a very quick and easy method and the rice literally gets cooked in max of 10 minutes. Of course, the pressure cooker has to cool down a bit before you can dig it. Open Pan method – Jeera Rice The next method is the open pan method. One of our favourites. In this method the rice comes out very fluffy and each grain is separate. In a pressure cooker too we can achieve the same, but we need to be careful of the timing when we open the pressure cooker. This method requires the rice to be precooked in an open pot. Drain and then the tadka with the required spices is made. This method is also good to use your left over rice, that is Jeera rice with cooked rice. Jeera Rice in Rice Cooker Another method is when I sometimes use my Rice cooker. Ingredients • 4 medium waxy potatoes, washed • 4 tbsp ghee • 1 tsp cumin seeds • 2 tsp ginger, grated • 2 cloves garlic, grated • 1 large green chilli, seeds removed and finely chopped • 1 tsp salt • 1 tsp ground cumin • 1 tsp ground coriander • ¼ tsp ground turmeric • 1 tsp Kashmiri or Korean chilli powder • juice of ½ a lemon • ¼ cup coriander leaves, roughly chopped Method • Step 1 Pierce the potatoes once or twice with a sharp knife and place in a microwave-safe dish. Microwave for 6 minutes, then turn (beware, they’ll be hot) and microwave for a further 6 minutes. Test the potatoes by squeezing the sides to see if they are soft. If still too firm, microwave in additional three-minute bursts until tender but still holding together. Allow to stand for 5 minutes to cool a little, then peel with a knife and cut into 3cm cubes. • Step 2 Heat a medium saucepan over medium heat and add the ghee. Add the cumin seeds and cook for about a minute until they start to crackle. Add the ginger, garlic, chilli and salt and then cook for a further minute. Add the dry spices and mix well. Squeeze in the lemon juice and add a few tablespoons of water. Mix to a paste. Add the potatoes and gently toss through the spice mixture. Cover and cook over very low heat for about 5 minutes. Stir through the coriander leaves, then serve.

Some variations to this recipe that are delicious: after adding the cumin seeds add onion, ginger, whole black peppercorn, cloves, or a cinnamon stick. You could also add all of the above options to make a rice chock-full of tastes! • Add the water and salt and bring to a boil. Once the water is boiling, reduce the heat to low and cover the saucepan. Cook the rice for approximately 15 minutes. If you feel the rice is getting burnt near the base of the pan as it cooks, one trick is to place the saucepan on another flat pan or griddle which is directly on the flame. Toss with a fork.
